for my sweetie pie

i have always been drawn to the idea of baking pies.
the whole act just exudes charm & neighborly love.

warmth. sweetness. hospitality.
just overflow from a warm pie dish.

with this adoration, i have always had a bit of hesitation.
i've been a little afraid to actually try to bake a pie.
until i finally thought,
i can't be afraid of a pie.
a little ol' pie.

and so today was the day.
i shook {very floury} hands with pie making 101.

i decided it was safe to use ina garten's deep dish apple pie recipe,
as i have never met an ina recipe that i did not love.

and so the tradition continues.

oh. my. heavens.
i am in love with my little pie.
my warm, bubbly, flaky, buttery, sugary, apple pie
has completely and utterly stolen my heart.

it is a good thing it takes a lot of time and energy to bake this little pie,
or i would be eating one for dessert daily. 

let me tell you about my very first adventure with pie baking.
i only have a teeny tiny four cup food processor,
and so, as you can imagine, my first go at making the crust 
ended with a wintery white christmas scene in my kitchen.
flour everywhere. 

a desperate call to mom,
and my lovie dashed over to grab her bigger food processor
{thank goodness for my sweetie pie}

the second go around was a much greater success.
i sliced & diced my very cold butter.



and made the pie dough.


i placed the dough in the fridge while i prepared the pie filling.

picked out my best lookin' apples.
and my prettiest, ruffled pie dish.


peeled, cored, sliced.




added the spices.
cinnamon. all spice. fresh ground nutmeg.
added the lemon zest & orang zest.



then i took the dough out of the fridge
and rolled it into two large pie shells.
i loved using my rolling pin. it was my first time.

i gently laid the first shell down on the bottom of the pie dish.
and filled the dish to the brim with the spiced apples.


then topped off the pie with the second shell.


the recipe calls for a pinch of sugar sprinkled on top,
but i kicked it up a notch and used vanilla sugar.

the hour of bake time felt like i waiting for christmas morning.
i had to use self control and not check the oven every five minutes,
and it was oh-so tempting.

the house smelled glorious. absolutely glorious.
all i wanted was to see my browned & bubbling pie.

{the three little dishes in the back are little breakfast treats. i placed the extra spiced apples in the bottom. added a spoonful of old fashioned oatmeal. a sprinkle of brown sugar. a tiny bit of butter. and then baked them. sunday breakfast for my lovie and me}


nothing sweeter.

i am so very blessed.
in so many ways.
but i am beyond blessed 
when it comes to my working environment.
this is a blessing i will never take for granted.

to be surrounded by such loving, generous, and compassionate people.
in a place where we can pray, & worship together.
where we are all working for one common goal.
to shape young minds and hearts,
all the while honoring our good Lord.
how special is that?

i work at a school that embraces hugs.
from people that offer prayers. 
a school where words of encouragement are given out freely.
and your teammates quickly become your second family.
a warm welcome always comes with each early morning.
our school is wonderful.

today i was blessed by my sweet, sweet coworkers. 
they hosted a bridal shower for me.
they took time out of their busy afternoons to celebrate my upcoming wedding.
to share excitement. to give well wishes. to pour happiness into my heart. 
and i am so grateful. 

i am so thankful to know each and every one of you. 
you make coming to work everyday such a great joy.
thank you for such a sweet afternoon.
i certainly was showered with love.

my first grade team leader, gayle
prayed the most loving prayer for my lovie and me.

teachers, administrators, coaches, and librarians 
all expressed their happiness for me.

and my other first grade teammate, susan
even brought gluten free cupcakes for this little bride-to-be.
if thats not a great friend, i don't know what is?!
and not to mention, they were the most lovely 
cupcakes i have ever laid eyes on.


there is nothing sweeter than sharing lavender cupcakes with my sweetest school friends.

presto pesto pizza

life sure has been busy these last few weeks.
gearing up for the wedding has consumed all my free minutes.
{but i wouldn't have it any other way}

in busy seasons like this one, when minutes are few
i love having great go-to dinners.
great dinners that i can whip up in a breeze.
and still taste divine.

here is our fave go-to dinner.
yes, i said ours. 
this happens to be one of my lovies faves. 
its healthy. quick. and bursting with flavors.

allow me to introduce our presto pesto pizza.

now, you may certainly use store bought pesto,
but i think fresh-made-from-scratch-pesto is so much better.
i do not even use a recipe. just go by taste.


 two heaping handfuls of fresh basil


a generous sprinkle of parmesan  cheese.
toss in some pine nuts, or walnuts if you prefer.
pour in some good extra virgin olive oil.
season with garlic. salt. and pepper.
chop and grind it till you reach the desired consistency.


doesn't that just look fresh?
the color is just out of this world.

presto. 
homemade pesto.

i like making my own pesto because i can control exactly what goes in it
{read: control freak}
i choose to only use organic products.
i also use the minimal amount of cheese and nuts needed.
i just think it is so much healthier this way.

nevertheless,
whichever pesto you choose,
spread it on your sammi's bakery millet and flax lavash shell.
you can find these shells at rollin' oats.
they are sinfully delish and over the top good for you. 


wash. dry. and slice some tomatoes.
i prefer organic tomatoes. one the vine. 
not sure why.
maybe i think they are prettier?



place the 'maters on the shells.


top with provolone cheese & green olives.


and then pop theses babies in the oven at 415. 
they only need to bake for about 8-10 minutes.
or until they look like this.


the shell is browned and extra crispy.
the cheese is melted.
perfection.


slice & devour. 

oh, and this is definitely a recipe you can play around with.
feel free to add or take away to your liking.

this go-to dinner never disappoints. 

twelve days of wedding

tomorrow marks the twelve day countdown.
we are getting married!!!
and we could not be more excited!!!

my goal for the next twelve days
is to make my little house become
our little home.

my lovie will be moving into my house on sunday, november 20.
and i want to make sure he feels like it is now our home.
a home full of love. warmth. espn. and books.
{two of my lovies faves}

so, i have decided that i will do a wedding version of the twelve days of christmas.
tomorrow is day one of the twelve days of wedding.
each day i will shower him with a gift.
a gift that makes my house our home. 

day one.
three M mugs from anthro.
since he will be living here, he needs multiple coffee mugs.
and it is only fitting that they should display our new name.
M for mr. & mrs. mills

day two. 
a bundle of hangers, 
tied tight with a pretty little bow.
he will be needing hangers to fill up his new closet.

day three. 
a shoe rack to protect his
1,683 pairs of black brooks brothers shoesies.

day four.
mens body wash. mens shampoo. mens shaving cream.
and a fluffy stack of new white towels.
now that we have two of us taking showers, we need double the towels.

day five.
pictures of his family and friends will be added to the gallery wall.
now both of our loved ones will grace the walls of this home.

day six.
labeled boxes to store his extras.
extra razors. extra contact solution. extra men things.

day seven.
a pantry chock full of old fashioned oatmeal.
now that he will be living here,
he will be eating breakfast here every morning.
and plain oatmeal is his fave.

day eight.
a dvr set to record all of his fave shows.

day nine.
house slippers.
not as luxe as mine, as he would not be caught dead wearing faux fur.
but some manly slipplies to wear around the house.
{this may or may not be a little selfish. i simply want him to take his outside shoes off when he gets in the door. so i figure, if he has some comfy slips, he will do so}

day ten.
a subscription to the new york times.
delivered to our new house.
delivered to him.

day eleven.
a newly monogrammed wreath to adorn our front door.
{again, maybe more for me... but i want to show him how proud i am of my new name}

and day twelve.
this is my favorite. it is most certainly a gift for the both of us.
on the morning of the twelfth day, our wedding day, 
he will open a sweet little card.
inside will be a scripture written.
he is to put this little card in his shoe for the wedding.
i will have the same scripture in my shoe.
we will forever be standing on scripture. 
together. 

i have not yet selected the scripture yet.
i would like some advice from all of you other wives.

slipplies

last christmas eve
i scored a pair of bed slippers in our family gift exchange.

this may seem insignificant to some,
but to others, those of you that long for coziness,
i am sure you can appreciate the great worth of slippers.

these were not just any ordinary slippers.
restoration hardware cashmere lined slippers.
go ahead and swoon.

i wore these little slippers to death.
i wore them through the winter, spring, and summer.
i wore them lounging. i wore them cleaning. i wore them everyday.
by summers end they were worn with love.
and they had to be pitched.

i have been counting down the days, literally,
till i could get my next pair of slippers.
my lovie said santa would bring them to me.
but i just couldn't wait. 

today was the day.
i went to restoration hardware to replace my old faithful slipplies.
i couldn't find the exact slippers i had before,
{however, i know they are available online}
but it brought much joy to my heart to see armoires chock full of
a much upgraded slipper.

let me introduce you to my new fave slipplie.


faux fur. inside & out. 
plush perfection.

and here is the slipper kicker,
they were on sale. 
yahoo.
i bought two pairs.
one for me. one for mom.
{she shares the same adoration of slippers}

the moment i got home this evening, i took a shower,
put on my coziest jammie pants, a warm waffle shirt, and my new slipplies.


... poured a piping hot cup of tea ...


and have crawled into bed with a good book.
{i am starting lunch in paris}

treasure hunts

every once in awhile
i like to go on little treasure hunts. 
i like to scour stores to find great little surprises
for great little dollars. 

goodwill is where x marks the spot. 

it is certainly hit or miss,
but i surely get lucky every so often.
would you believe me if i told you 50 percent of my home 
is furnished a la good will?
it is true.

a trained eye.
some sand paper.
a paint brush.
a gallon of your fave hue
some extra time on your hands.
and you've got your self a little treasure. 
along with a great sense of 
accomplishment.

historically,
{my lovie always says that. i think it sounds so intelligent}
so, yes, historically, 
i would shop the good wills looking for furniture to refurbish.
but i have crossed the line, friends.
who knew good will had such a selection of crystal?!

oh, wait. it gets better.

this was such a great find.
11 authentic. vintage. champagne glasses.
with gold trim.
i die.

here is the kicker. 
all 11 cost a grand total of
twenty two dollars.
like i said. i die.


they are perfect paired with my gold treasures from pier one.

these could certainly be used for sipping champagne.
but i see myself using them to serve dessert.
i was dying to use them, 
so i decided i would surprise my lovie when he got home from work.
{i totally endorse skipping dinner & going straight to dessert}

i am so thrilled with these little treasures. 
i can hardly wait to host a dinner party with all my pretty goldies.

on sale for essentially nothing.
perfectly small. 
perfectly elegant.
perfectly perfect for all my new gold goodies.

gluten free goodness

i am a gluten free gal by choice. 
crazy? maybe a little. 
but i most certainly believe that it is a healthier lifestyle.
and i totally endorse healthy living.

i am not over the top about what i do or do not put in my body,
and i absolutely will cheat a treat in now and again.
but i do strive to eat on the cleaner and greener side.

i buy the necessary organic groceries.
produce.
dairy.
meat.

i limit my sugar intake.
{read: eliminated my nightly trip to the frozen yogurt shop}

i eat flax and millet like it's going out of style.

and i make juice out of my fave fruits and veg.
apples. carrots. ginger. spinach. kale. cucumber. lemons. squash. berries. 

i have been gluten free for about two months now.
and i must admit, i love the way i feel.
i feel clean.
i crave clean food.
and i know my body is thankful. 

it has been so much easier than i thought it would be. 
instead of trying to replace what i used to eat with gluten free products
{pizza, sandwiches, pasta}
i just avoid foods that typically would contain gluten.
in other words, i do not buy gluten free bread or gluten free pasta.
i just have not found ones that i enjoy eating. 

until today.
i made thomas keller's ad hoc gluten free waffles for dinner.
i was in waffle wonderment.
they were fluffy. buttery. to-die-for-good.

i even made it healthier by using fat free organic milk.
one cage free organic egg.
i skipped topping them with the usual butter & syrup.
instead i spread a tablespoon of  my fave peanut butter.
and drizzled some light agave nectar on top.
wow. wow. wow.

so, for my fellow gluten free gals {and guys}
run, don't walk. over to your nearest williams sonoma.
go get a box or two for you. 


and to make these waffles even more divine,
add a dash of cinnamon.
and a teaspoon of vanilla.
just stir it into the waffle mixture.
and enjoy.

{i have also made the ad hoc gluten free brownies. better than the best. super fudgy}
